THE best bread recipe

26 Apr

I have this friend. Her name is Katie. She makes the best bread I have ever tasted. I don’t know if it’s just girls that love bread so much or if there are actually guys out there that drool at the thought as well, but when she tells me and my small group girls that she’s making this bread, we all start salivating. It’s ridiculous.

I started craving The Bread the other day, (that’s what we call it. The Bread) so Katie and I decided to make it and document it as well so that no one has to live without this bread any longer. I know I’m talking it up quite a bit. You might be skeptical. But I think most of you know about my love for Red Lobster biscuits. Well, this bread is better than those biscuits. (Agh, I feel like I’m having an affair with The Bread!) For real, make this and you’ll agree.

THE BREAD

What you’ll need:

2 cups hot water
2 Tbls dry active yeast
1/3 cup sugar
2 tsp salt
1/3 cup vegetable oil
1/2 tsp garlic powder
1/2 tsp oregano
4-5 cups flour (but probably more like 6)

Mix the first 7 ingredients together

Then add 2 cups of flour and mix well for about 2 minutes.

It should resemble something like that.

Slowly add the rest of the flour a cup at a time. A spoon will work for a while but then you gotta get your hands in there.

Put the dough on a floured surface (or floured bowl) and knead it until the bread is no longer sticky. (You can decide if it needs more flour as you are kneading)

Once it’s kneaded, not sticky and looks like a ball, place it in a well oiled bowl and let it rise in a warm place for 1 hour.

Once it’s risen for an hour, split the dough in half. Separate each half into 3 small balls.

Form the balls into a long, thin ropes. Then braid them on a well oiled cookie sheet.

Once you get to the bottom, tuck each end in. Your 2 halves should end up looking like this:

Let it rise like this for 30 minutes before baking. Then bake at 375 for 15-20 minutes. Remove from the oven and baste with butter. EAT IMMEDIATELY. I say this because it’s the truth. This bread tastes the best when it’s a little gooey inside and very, very warm.

See? Perfection. I just can’t describe this to you or even just convince you by the pictures. You have to bake it and try it for yourself! Or I’ll make it and tell you to come over and eat it. I think it’s the oregano that does me in. It’s just perfect.

The Bread Recipe

2 cups hot water
2 Tbls dry active yeast
1/3 cup sugar
2 tsp salt
1/3 cup vegetable oil
1/2 tsp garlic powder
1/2 tsp oregano
4-5 cups flour (but probably more like 6)

Mix first seven ingredients together, plus two cups of flour.  Mix well for two minutes.  Then slowly add in the remaining flour until dough forms a ball.  Put out on floured surface and knead in more flour until dough is no longer sticky.

Place in an oiled bowl to rise for 1 hour.  Split dough into halves.  Separate each half into three small balls.  Make each small ball into a thin rope.  Then place on a greased cookie sheet and braid the three strands together.

Let rise for 30 minutes.

Bake at 375 for 15-20 minutes.

Concerts :: The Civil Wars

20 Apr

Back in July Nick and I went to see The Swell Season in concert at First Avenue. They were fantastic. At the end of my recap post I mentioned that we were going to see The Civil Wars that August. We never did end up going (and I’m not sure why). But we went with a ton of friends Monday night at Bryant Lake Bowl and oh my word…

Breathtaking

I think that might be the best word to describe that concert.  I’ve been to concerts and they were okay. This one was outstanding. First of all, Bryant Lake Bowl Theater was such a nice, homey place for a concert. They served food, we got to sit, and every seat was an amazing. You just couldn’t go wrong! By the time the show started I was full, relaxed, and ready to enjoy some lovely music.

Their opener was White Dress. She was good and we all enjoyed listening to her. However, I think it’s safe to say we were ALL itching for The Civil Wars to play! We were not disappointed. They were delightful to your ears and mesmerizing to watch. They had us laughing and I even came close to tears several times. Their harmony is so good!

At the end of the concert, Nick showed me a piece of paper that our friend Ashley had snagged from off the stage. It was The Civil Wars’ song set for the evening.

Why yes. Yes that is our names. Nick had contacted them and asked if they would dedicate a song to me that evening. He told them about our molar pregnancy and our failed adoption and how that would mean a lot to him (and myself!) if they could do it. Unfortunately, they both forgot or weren’t able to fit it in. We met them afterward and Joy Williams apologized for not dedicating it publicly. She told me that during the song however, she was dedicating it to me herself and to know that I was not alone in this. Not at all. Seriously, I almost cried. Kindness does that to me. It was so awesome of them. Here are the lyrics to the song they picked to dedicate to us.

C’est La Mort

Joy Williams and John Paul White

Swan dive down eleven stories high
Hold your breath until you see the light
You can sink to the bottom of the sea
Just don’t go without me

Go get lost where no one can be found
Drink so long and deep until you drown
Say your goodbyes but darling if you please
Don’t go without me

C’est la vie
C’est la mort
You and me
Forevermore

Let’s walk down the road that has no end
Steal away where only angels tread
Heaven or hell or somewhere in between
Cross your heart to take me when you leave
Don’t go, please don’t go
Don’t go without me

Ashley was way to kind and actually gave us the original piece of paper. We’ve decided to frame it and hang it in our room. Nick made my night by doing all that for me. <3

I wish we could go to another concert…and soon! I will be going to Bryant Lake Bowl for more concerts though. I loved it. Here’s one more song from the evening. Nick recorded it on his phone and it came out really well.  This is one of their most popular songs. It’s very beautiful.

Poison & Wine

Life and Music Combined

7 Jul

I love listening to music at work. Even if just to block out the people around me. I feel like I am in my own little world. I wasn’t really paying much attention until one of my all time favorite songs started playing.

Cities 97 used to play it non-stop when Nick and I first moved to Minneapolis. It felt like my theme song, my go-to song when I was sad, or still uncomfortable living in a new big city. I know all the words by heart. It soothes my soul and reminds me of the past. Because who doesn’t love good, ole’ memories?

The song is “I’m Yours” by Jason Mraz. As it started playing on my iPhone, I was whisked away to 2 years ago (has it been almost 2 years that I’ve lived here?!). I was younger, just married, happy, excited, scared, introverted and now landlocked. How was I going to make it here? Of course, I’m not saying that this song was what got me through, but it sure did play a part.

That got me thinking to other songs I associate with the “innocent” beginnings of places I have lived or events in my life I have gone through:

“Sundown” by Iver reminds me of my time in PA while traveling with ERM and how I fell in love with Nicolas because of that song.

“Hello” by Evanescence reminds me of living in FL, of my first boyfriend, of things that happened to me there that have forever molded me to be who I am; good and bad. It’s a sad song, but it makes me happy.

“Because You Loved Me” by Celine Dion reminds me of my childhood home in Bloomsburg, PA where I made my first best friend (whom I still love to pieces).

These songs can bring me to tears in a matter of seconds if I let them. They are so full of meaning to me. I have others as well; songs that speak to my heart of life and all it means, of good times, bad times, innocent times; songs that I associate with certain people and places. It’s truly amazing, really. I’ll give you one more “for instance.”

Whenever I think of the weeks I was in Honduras with Nick’s family for Christmas ’07, I remember one day when we were driving around visiting orphanages and my sister-in-law, Elisabeth, and I were listening to music. The song “The Story” by Brandi Carlile came on and we had never heard it before. We laughed at minute 2:53 for a really long time. Now every time I hear that song, I think of Christmas and Elisabeth and of my first time ever being with Nick’s family, and I just laugh. Crazy.

Do you have any songs like that?

Happy 4th of July!

This is probably one of my favorite videos!

Credits

Nick and I are house-sitting and dog-sitting this weekend, so we are having a low key party at our friend’s house. Then we are planning on walking down to the river to watch the fireworks. Last year, Nick and I missed the fireworks because he was leaving very early the next day to go to Guatemala! I’m so glad he isn’t going anywhere right now AND that we get to see fireworks!

What are you doing for this holiday? Whatever it is, I hope you enjoy the day!

My Baby Could be 9 Days Old…

24 Jun

This post is a little overdue, by like 9 months, and I have been contemplating whether I should even write it or not. But I know it needs to be out. I have been holding this for a long time.

Back in October, Nick and I found out we were pregnant. This was the best moment of my life. You see, I had been waiting since my young teenage years to be a mama. My dream was coming true. I couldn’t believe it.

We had an early ultrasound 2 weeks later when I was 7 weeks exactly. There was nothing there. However, I was still having MAJOR morning sickness that lasted all day long. I couldn’t understand why I couldn’t see my baby especially if I could feel that the baby was there. The doctors determined I must be miscarrying. For a whole week I cried and waited for the telltale sign of blood to show that my baby was gone. Nothing happened. I dared to hope and pray that maybe the doctors were wrong and my baby was safe inside of me, living and growing. 6 days after my first ultrasound, I had one more. The final one.

It was a molar pregnancy.

I had never heard of this before. But it sounded horrible. My stomach was clenched and sick. There is a partial molar or a complete molar. I had a complete molar. No baby.

I took this surprisingly well at the time. I just forced the idea of what was happening to me to the back of my mind. The next day, when I was 8 weeks exactly, Nick and I walked to the hospital for me to undergo surgery to have the tissue removed. I took this all in stride and felt fine. I was sore and a little sad after the surgery. Nick tried to talk to me about adoption in hopes to keep my spirits up. I couldn’t face it yet, at least not for a couple of days. My surgery was on a Tuesday. By Saturday night, I was excited to start the adoption process.

You might think that I just shooed that month out of my mind and moved on. To an extent, yes, I did. I wasn’t going to dwell on the past and let it dominate my life. I had to move on. I had to keep going and trust that Jesus knows what He’s doing, even though I was so confused as to why this was the best thing for me. I also couldn’t stand the pain I felt at being empty inside, with nothing in my womb. When I did think about it, I would start crying and so I would hide it away again.

I pushed my due date out of mind. I honestly couldn’t remember it anymore. That scared me. I was scared because I didn’t know, because I wanted to know, but didn’t have the strength to research it. I found the strength today, recalling that the day was supposed to be the 15th. Of June? July? So I checked…June 15, 2010

 And then I cried.

If I had had a baby in my womb instead of cancerous tissue, I could have a 9 day old child right now. I could be a mama at this very minute. This would have been a really good week for us.

9 months have passed since then; I have many friends now who are pregnant and enjoying motherhood. I could be bitter. I could be real good at being bitter. I could wail and lash out to my God and talk about the unfairness of it all. I could be good at that too. And it would be SO easy to do.

But God hasn’t called me to an easy route. He hasn’t promised me ease, pleasure, and comfort. He’s promised me a hope and a future. And I’m going to cling to that. I’m going to cling to the knowledge that I am adopting a child that desperately needs a family. And I will love that child as if they came from my own body. Then one day, we will try again. We’ll see if the Lord will have compassion on us and allow us to be pregnant. Until that day though, I am praising Him for keeping bitterness out of my life, for keeping me joyful in all circumstances. For providing me with the knowledge of what it’s like to love someone that isn’t even born yet, for what it’s like to feel like a mother. For the uncountable ways He has blessed our adoption process, for my loving husband and faithful friends. I can still cry and know that He is God.

 I truly feel so blessed.

Movie Time!

7 Jun

Nick and I went to see Shrek Forever After the other night. It was pretty good! I still haven’t seen the 3rd one but I have not heard great things about it either.  Anyway, after purchasing our tickets last night, I automatically reached for my wallet to put my stub in this special “movie stub” compartment. I then realized I have a TON of stubs in here! So, for nostalgic reasons only, I shall write them down. Mind you, these aren’t all as some of them have been lost or they are in some journal somewhere.

Marley’s first photo shoot!

4 Jun

These are just 2 of my favorites! Here are the rest on Facebook.

The newest addition to our family: Marley!

28 May

So, I posted on Facebook when we got Marley that I could not for the life of me pick out a name for him. I have NEVER had such a hard time figuring out a name before! When we got Katie and Hayley (ferrets) we named them in 5 minutes. This time around it took me 2 days. Oh my. We even had a “naming” party the night we brought him home. You should have heard the names thrown out there! (Thanks Katie, Trent, Stefan and Drew)

Anyway, my FB friends (and Nick’s) were so wonderful in providing ideas for our kitten! I would like to take the time to thank you guys and make out a list of all the suggestions:

  • Sebastian- my mom
  • Gerald- Bekah and Jerald
  • Watson, Bartholomew, Achilles- Bekah
  • Satellite, Van Gogh, Rockwell, Sparticus, King James, Elf, Puggle, Chai- Christa
  • Oliver- Gabe
  • Boscoe- Gabe and Trent
  • Roscoe- Trent

  • Tucker- Shane B.
  • Wilbur, Thomas, Henry, Gibbs, Buttons, Buddy- Sue, aka mom
  • Muffin- Dennis
  • Terrance- Michael
  • Spot, Fido- Charlene
  • Jasper- Mindy
  • Katface, Assfur- Marty
  • Mr Cat- Ashley B.
  • Zeke- Lyssa
  • Boots- Ashley C.

So I liked a lot of those names and I would start to call him by some and it just didn’t sound right! Some of names Nick and I tossed also around were Tumnus, Digory, Sirius, Lewis, O’Malley, and Figaro.

Which one is your favorite name?

Now I Can Relax

19 May

We have the best landlord! I love it! He is going to tweak it a little bit cuz its kinda wobbly in the center (it’s not hooked to the ground at all), but at least its in! That’s all that matters. Now I wanna find baby gates…but I don’t really need them yet. Ok, putting the keys down.

We had our visit with our social worker today. It went well. Not much to tell about it, except I kept yawning every 10 seconds. Then my eyes would get watery. Sigh. But Nick came to the rescue with some tea (thanks, love!), since we were out of coffee (which is what I wanted) and it woke me up. No more yawning! We will be meeting again next Wednesday to talk about biographical stuff (aka; tons of questions to answer about ourselves). She loved the house though! Heck yeah she did.

I also bought this book today:

The Baby Name Wizard

Andie told me about this book. I am seriously obsessed with names. Ask Nick. I sit around and think about them all the time. I just love finding exotic, new names. And yes, we have names picked out for a boy or girl and no, I’m not telling you. :) And Nick won’t tell you either. I can’t wait to read this though!

Something that has been worrying me lately

6 May

These are the stairs into our bedroom which is on the 3rd floor. You might think this is trivial, worrying about stairs. And it probably is to 99% of you. BUT that other 1% has FALLEN, yes fallen, down these stairs. It kinda reminds me of a gaping hold of Death. But I digress.

We are adopting and in this process we have to have a social worker come visit and inspect our home and our lives. If you would take one more look at the pictures above, you would see why I have been worrying about them lately. Inspection of these stairs would, I believe, result in failure. That’s something that frankly I wouldn’t want to happen.

I asked Nick to email our landlord 2 days ago about getting railings in there ASAP. I figured it couldn’t hurt. I got an email back from Nick like 30 minutes later saying that he was ALL FOR IT!

Can I just say that a HUGE weight was lifted from my shoulders? I have been having nightmares about these stairs, people. And death has been involved. (Don’t judge me) Our landlord came over yesterday to take measurements of the sides of that gaping hole of death yesterday. He said he even has all the parts for the railing and has just needed a really good reason to push him into putting those suckers in. I’m a motivator. :)

I’m not worrying anymore. Thank you, Lord.
