I really wanted to go to restauran "Helm" by Chef : Josh Boutwood, so this fall I impulsively bought a Airplane ticket to the Philippines. And finally, on October 8th, I visited to a restaurant called "Helm" in Makati.

This bread is incredibly flavorful, perfectly baked using homemade yeast, and absolutely delicious.

🧑‍🍳About Chef Josh Boutwood

Born in Bedford, England on November 30, 1986 to a Filipino father and English mother, Josh’s formative life was almost nomadic— moving from a typical English county town to the tropical beaches of Boracay and back to the vibrant food scenes of Northern Europe.

Travelling between Spain and the United Kingdom, Josh would continue his formal education. But he preferred working in his mother’s restaurants in Spain and Boracay than going to school. Working as a dishwasher and prep cook, Josh discovered the delight of satisfying people with food.
His upbringing, along with training stints at Raymond Blanc’s Le Manoir aux Quat’Saisons in England and Noma in Denmark, informs his globally nuanced approach to food.

Opened in 2019 after globetrotting Stephan Duhesme returned to his native Philippines, Metiz is a showcase to all things Filipino, using all-local ingredients. The name comes from the French ‘mestizo’, a term that refers to people of mixed Filipino and foreign ancestry, reflecting the chef’s own heritage and the meeting of influences in his native cuisine.

José Rizal (born in Calamba, Philippines) was a patriot, physician, and man of letters who influenced the Philippine nationalist movement.
in 1888 Jose Rezal came to Japan, He stayed in Tokyo for a month.

In fact, the ancestors of the Philippine national hero Jose Rizal were Chinese immigrants. Jose is the 22nd generation descendant of the Chinese Cua Yi Lam. Lam was baptized as Domingo Lamco in 1697 at the age of 35 in Manila. He lived in the Parian Ghetto near Intramuros.

There is a larger José Rizal monument in mainland China than in Manila.

🇪🇸Spanish Explorer: Ruy López de Villalobos.

🇪🇸Ruy López de Villalobos was a Spanish explorer who led a failed attempt to colonize the Philippines in 1544

Villalobos was commissioned in 1541 by Antonio de Mendoza, the viceroyof New Spain and first colonial administrator in the New World, to send an expedition to the Philippines, then known to the Spanish as the "Islands of the West" (Islas del Poniente).

In 1543, he set sail from Mindanao, passed through Okinawa, and discovered the volcanoes of Japan. I also think he was looking for whales as well as minerals like gold and silver.

Francis Xavier is a Jesuit missionary, came to Japan to spread Christianity.

🎧DJ Bar Yes Please in BGC Uptown

I met a very skilled bartender in Manila. I always order cocktails from her. I first visited “Yes Please” in Uptown BGC in 2017. This bar has an excellent interior design from an architectural point of view, making our stay a very comfortable space. Of course, the drinks are also delicious. In addition, the sound equipment is of the highest quality and the PA engineer's skills are high. And the DJ's selection and play make our drinks even more fun and intoxicating.

I'm enjoying the restaurants in Manila.

🇵🇭Leyte Island

In February 2025, I visited the memorial on the island of Leyte in the Philippines to commemorate those who died in the Pacific War 80 years ago.

First, I flew to Tacloban Airport and visited the MacArthur Landing Memorial Park in Palo City. Then, I traveled to Ormoc by minivan.

🇵🇭Bohol

I traveled from Cebu Island to Bohol Island by ferry. After relaxing on the beautiful beaches of Panglao, I stayed for a while in a rural village near the Chocolate Hills and enjoyed self-catering life.
