稚加栄といえば、店内の中央にドーンと鎮座する圧倒的なスケールの大きな生簀です。 我が家のお気に入りは、その生簀をぐるりと囲むカウンター席。透き通った水の中をたくさんの魚たちが元気に泳ぎ回る姿は、料理を待つ間もずっと見ていられるほど楽しく、子供心にも大人になっても好奇心をくすぐられる最高の空間でした。 板前さんが手際よく魚をすくい上げる様子を眺めながら、「もうすぐ私たちの関アジかな？」とワクワクして待つ時間は、まさに至福のひとときでした。

生簀から揚がったばかりの関アジや関サバは、鮮度が抜群。身がキュッと引き締まっていて透明感があり、一口頬張ると口の中で跳ね返すようなプリプリの歯ごたえと甘みが広がります。 「やっぱり稚加栄の関アジ・関サバは格別だね」と、家族で顔を見合わせて舌鼓を打った時間は、我が家の大切な歴史の一ページです。 最高の食材、職人技、そして活気あふれる空間。五感のすべてで「本物の美味しさ」を味わわせてくれる、我が家にとって永遠の定番です。

Our family used to have a very special tradition that we eagerly looked forward to every season: visiting the classic Japanese restaurant "Chikae" in Tenjin, Fukuoka. For over 30 years, we have frequented this spot with one main goal—enjoying seasonal Seki Aji (horse mackerel) and Seki Saba (mackerel). Today, I’d like to share memories of the giant fish tank right before our eyes and the unforgettable flavors we enjoyed.

What makes Chikae truly iconic is the astonishingly massive fish tank sitting right in the center of the dining hall. Our favorite spot was always at the counter surrounding the tank. Watching countless fish swimming lively through the crystal-clear water was pure entertainment—a sight that fascinated me as a child and continued to charm me as an adult. Watching the chefs skillfully scoop up the fish and wondering, "Is that going to be our Seki Aji?" made even the waiting time feel like a joyful part of the meal.

Freshly caught straight from the tank, the Seki Aji and Seki Saba were extraordinarily fresh. The flesh was firm, translucent, and packed with a sweet, rich flavor with every snappy bite. Exchanging happy looks with my family and saying, "Nothing beats the Seki Aji and Seki Saba at Chikae!" became a cherished chapter in our family’s story. Prime ingredients, master craftsmanship, and a lively atmosphere—Chikae gave us an authentic taste of excellence that will forever remain our family classic.
