How long til mods are updated to current update like Script Extender?

Script extender is usually pretty quick. Like a day or so.
The rest? who knows.
its best to block the update by making the appmanifest file read only in till the mods you use get updated and the community figures out if the update broke the game like the update a while back did that Bethesda just left broken for six months

The other main mods like AKCWR also pretty quick. Usually a few days more after SE is updated and the update is planned on Monday, which should make everybody back in business by Friday.

The safest route is not to update (only update on Fallout.exe in steam) and route the game to Fallout SE as default starter in Vortex, which should be the default anyway. Then after the update wait a few days until every mod you run is updated, update accordingly and you're good to go.
Depends on the mod makers.

F4SE is usually pretty quick. (May 27 update, F4Se was updated 20 minutes after the update went "live")

As for your other mods, that will depend on the mod author and the changes that Bethesda makes to the base game files. -which we have no idea until the patch comes out.

It doesn't take him/them? long to update, usually a few days.

I blocked updates quite awhile ago. They don't seem to be adding anything very large and I don't care too much about the workshop store thingy either.
