Interested in playing but..
it feels like there is a huge learning curve to this game, i might be wrong though.

I'm new to MH and would like to ask what the game's gameplay loop is like. Is it basically: Enter world - Hunt - Collect - Upgrade - repeat?

Curious to read your answers

UPGRADE - find the specific upgrade that you like that matches your playstyle.
I'm use longsword a lot since I suck at other weapons so I need that level 7 crit and quick sheathe level 3.

Then repeat grinding for gears unless you get really good that no armor run is enough.
There is a story mode and tutorials and such, but the basic loop is:

1.) Hunt monster to collect parts
2.) Use parts to make stronger weapons and armor
3.) Use your new gear to hunt even stronger monsters.
Repeat
I think the learning curve is quite simple (aside from what kind weapon you're using) especially if you ever played souls like games in my opinion. its not just always about Hunting... you can do delivery quests, capture quests and go out on expeditions to find some monsters that aren't on the main story

There is a large learning curve as the game doesn't hold much back from you in the beginning. You can start with any of 14 weapons, and you have access to all moves (plus more moves if you have Iceborne purchased). Learning how to use your weapon and how the game's combat flows will take some time, and MonHun doesn't hold your hand, but it also doesn't throw anything at you that you can't reasonably handle.

As for the gameplay loop, generally you: choose a mission from the quest board/handler, land in the map where the monster is, search for it, fight it, capture or kill it to gain materials, return to town, use those materials to make better weapons and armor, and repeat the process. You'll also pick up other resources along the way, like bones, minerals, mushrooms and other plants to aid in crafting potions and other items that can aid you in your hunts.
The huge learning curve is expecting this game to play like other action games only to realize it's so much different.
basically yes, the core gameplay loop is exactly like that; fight monster, skin him, forge stuff, repeat.

WHat differs is that Low Rank (LR) is the "tutorial mode" and exactly 1/3 of the "story mode".
High Rank introduces new stuff, increases the difficulty level, and builds/jewels starts becoming the main thing. Also it's the second third of the story.

Then Iceborne is basically a soft-reset of the game; High Rank becomes obsolete and feels like playing some kind of NG+3 game with new mechanics and the whole ♥♥♥♥♥♥♥ roster of monsters/math stuff/builds/gimmicks/whatever.

Then it just goes into the "endgame-1" mode and gradually unlocks the "true endgame" (ie: Raging brachy / Furious Rajang / Fatalis) which will feel like going to "NG+7" mode, compared to the "endgame-1".

Monster Hunter has its origin on the Playstation 2, ok?

The original idea was to create a simple Online-COOP for 4 players and even there the Playstation 2 only barely managed this back then.

Since then hard- and software evolved step by step for ca. 20 years. But for the community it's still that COOP-hunt which matters.

Aside from this there's something to add:

You are always forgetting that in the old MH titles people talked more with another. Almost like in a MMORPG, but more casually. MMORPGs always end in guilds, PvP-, GvG- and RvR-Gameplay and that has something from generating "group-isolated" sub-communities.
Monster Hunter has never had this issue, cause simply everyone reached the end game sooner or later. And thus, the community rather stayed more relaxed and open-hearted and talk-active in between quests.

But... that also had something to do with the fact that people joined cities and discussed what was to do next! You can say that MH World bypasses that concept by using the SOS-system.
That makes combat smoother for those, who never fit into other parties from the start, but that also makes this game very monotonic, cause people have unlearned to communicate.
To add another point:

The chatbox of MH World is a real mess! It's simply... AW.FULL! The older MH-titles had a much better chatbox-system, where not every nonsense from your Palico or other "system messages" are automatically written into the chatbox.
And you had only a single chatbox to check.
This is a very ♥♥♥♥♥♥ game. you should not play it. it is nothing but a struggle. if you dont have a high level friend to help you, you will throw wo many hourse after nothing. nothing but a waste of ♥♥♥♥♥♥♥ time

I think the main issue is whether you can get use to the tank control, (meaning WASD movement key control direction of attack)

No one plays it with WASD. Play it with Controller aka Gamepad.
Yes, nothing more to add here. As for difficulty, it's subjective. Some would call this too brutal, some would call this casual souls-like. Idk you personally but if you ever play a game with similar loop (like God Eater for example) and grind, you'll be fine. The weapons combo might throw you off but you'll get by.
