Sodium bicarbonate or sodium hydrogen carbonate is a fine, white, powder-like substance commonly found in many households. It is a versatile compound with applications that go far beyond cooking. In addition to being used in baking, it is widely used in cleaning, personal care, medicine, and various industrial processes, making it an important everyday chemical. The chemical formula of sodium bicarbonate is NaHCO₃. It is an ionic compound composed of:

Sodium bicarbonate is well known for its leavening (raising) property in baking. When it reacts with acidic substances, it produces carbon dioxide gas, which causes dough or batter to rise and become soft and fluffy

Preparation

Baking soda is prepared by passing carbon dioxide gas through ammoniated brine (a solution of sodium chloride). This process is part of the Solvay process.

Sodium hydrogen carbonate is obtained as a precipitate because it is less soluble in water.

Chemical Properties

1. Action of Heat

On heating, baking soda decomposes to form sodium carbonate, water, and carbon dioxide.

2. Reaction with Acids

When it reacts with acids, carbon dioxide gas is produced.
