We're Alive...

I was just looking at my blog the other day and realized that it has been over a YEAR since I posted last. In the past year, Josh and I have/are:

1. Been to Washington twice (Seattle area). Once for Thanksgiving and once for my sister's wedding last week.
2. Expecting a baby! It is a girl and her name is Madelyn. She is due on May 27th...but she can come earlier if she wants to! (Hint....hint!)
3. Bought new furniture for our home and painted pretty much the whole house. I will post pics when the project is all done. We still have our bedroom to re-paint and the nursery to put together and paint.
4. I got a new job at the hospital in IT. I love it!
5. Bought a 28' Camp Trailer and Truck. We had such a fun summer with the camp trailer. We were in Island Park (20 mins south of Yellowstone) about every other weekend. A camp trailer just makes camping so much more fun.
6. Met new family members who found us from Denmark. It really felt like we had known them a lot longer than a few days! And they found us thanks to Facebook! How cool is that?

I'm sure we have done more, but that is it in a nutshell!

Chicken Tortilla Soup

Sorry! I do not have a pic for this. But, this soup is GREAT. It's not your really brothy soup, it has more of a tomato base. BUT, don't let that fool you! It's packed with flavor, especially with the fresh cilantro! Enjoy! :)

Ingredients
1 onion, chopped
3 cloves garlic, minced
1 tablespoon olive oil
2 teaspoons chili powder
1 teaspoon dried oregano
1 (28 ounce) can crushed tomatoes
1 (10.5 ounce) can condensed chicken broth
1 1/4 cups water
2 cup whole corn kernels, cooked
1 (4 ounce) can chopped green chile peppers
1 (15 ounce) can black beans, rinsed and drained
1/4 cup chopped fresh cilantro
2 boneless chicken breast halves, cooked and cut into bite-sized pieces
crushed tortilla chips
sliced avocado
shredded Monterey Jack cheese
chopped green onions

Directions
1.In a medium stock pot, heat oil over medium heat. Saute onion and garlic in oil until soft. Stir in chili powder, oregano, tomatoes, broth, and water. Bring to a boil, and simmer for 5 to 10 minutes.
2.Stir in corn, hominy, chiles, beans, cilantro, and chicken. Simmer for 10 minutes.
3.Ladle soup into individual serving bowls, and top with crushed tortilla chips, avocado slices, cheese, and chopped green onion.

This is a great article

Don't worry blogger friends, I don't have to try to forgive any of you. None of you have upset me. I've had some people in my life recently that I am angry with, and I'm tired of it. I went to find some resources on forgiveness today and this article touched my heart. I hope if you get a chance to read this, that you do. Even if you are not LDS, I'm sure you can relate to this.

http://lds.org/general-conference/2007/04/the-healing-power-of-forgiveness?lang=eng

My favorite points of the article were these:

“Forgiveness is freeing up and putting to better use the energy once consumed by holding grudges, harboring resentments, and nursing unhealed wounds. It is rediscovering the strengths we always had and relocating our limitless capacity to understand and accept other people and ourselves.”

"It is not easy to let go and empty our hearts of festering resentment. The Savior has offered to all of us a precious peace through His Atonement, but this can come only as we are willing to cast out negative feelings of anger, spite, or revenge. For all of us who forgive “those who trespass against us,” 19 even those who have committed serious crimes, the Atonement brings a measure of peace and comfort."

"Let us remember that we need to forgive to be forgiven. In the words of one of my favorite hymns, “Oh, forgive as thou wouldst be e’en forgiven now by me.” 20 With all my heart and soul, I believe in the healing power that can come to us as we follow the counsel of the Savior “to forgive all men.” 21 In the name of Jesus Christ, amen."

Max's New Digs

We decided it was time to upgrade Max from this:
To this:
He loves it! We put this huge thing in our unfinished basement. He has so much more room now!
Oh. And I had to post this too.
He wasn't too happy with me.

Chinese Chicken Salad

Sorry I haven't posted recipes in a while. I promise to be better. Anyway, have you ever had this? It's delicious! I guess it's pretty popular to make around here, but I had never had it. Here's the recipe:

1 head cabbage (or lettuce, but I don't recommend it), torn or cut into bite sized pieces.
2 C. chicken, cooked and cubed
1 8 oz. can mandarin oranges
2 pkg. ramen noodles, broken into pieces
1 C. sliced almonds (or you can cut your own from whole almonds)
1/4 C. olive oil
1/2 C. sugar
1/4 C. white vinegar
3/4 C. canola oil
2 tbsp. soy sauce

In a large salad bowl, combine cabbage, chicken and oranges. In a skillet, saute ramen noodles, and almonds in olive oil until brown. Cool completely. Add to cabbage mixture. In a saucepan, combine sugar, vinegar, canola oil, and soy sauce. Boil for 1 minute. Cool completely. Immediately before serving, toss dressing lightly over salad and toss. I would recommend not putting the dressing over the whole salad, just over each individual portion, like a regular salad. Keep leftovers in the fridge. Enjoy!

Cinnamon Rolls: Definitely not part of my diet!

Sometimes I have to make the occasional treat while I am trying to eat healthy foods, or else I think about them all the time and then I binge on the bad foods. Josh has been asking for cinnamon rolls for about a week and I finally made them yesterday, thanks to Pioneer Woman. Her blog is here: http://thepioneerwoman.com. I love her blog. She has some awesome recipes. I got my cinnamon roll recipe from her, and I thought I would share it with you. I made some modifications to fit our tastes, but if you want to compare recipes side by side, there is the link.

Note: I am giving you HALF of her recipe. Her recipe calls makes 40-50 cinnamon rolls. And well, Josh and I do not need to eat 40-50 cinnamon rolls, let alone try and find other homes for all of them.

You will need:
Dough:
1/2 quart of whole milk (I used 2% and it was fine. 1/2 a quart is 2 cups)
1/2 c. vegetable oil
1/2 c. sugar
1 package (2 1/4 tsp.) active dry yeast
4.5 cups all purpose flour
1/2 heaping teaspoon baking powder
1/2 scant teaspoon of baking soda
1/2 tablespoon salt

Filling:
1 c. melted butter, plus more to butter the pans
1/8 cup cinnamon for sprinking (I just eyeball it)
1 c. sugar

Cream cheese frosting: (This is another recipe that I found, not from P.W.)
8 oz. cream cheese, softened
1/4 c. butter, softened
1 c. sifted powdered sugar
1 tsp. vanilla

For the actual instructions on how to make this, go to the blog above. She describes it in perfect detail! Here's how they turned out:

This is only one pan. The recipe I gave you makes 2 pans. Josh had already eaten one cinnamon roll out of this batch.
