Bergamote

Bergamot is the fruit of bergamot, a tree belonging to the Rutaceae family, mainly cultivated in the province of Reggio Calabria since the 18th century and only on a narrow strip of the Calabrian coast, along the Ionian Sea and the Tyrrhenian Sea where the bergamot still fuels a small local industry. In 1811, Giorgio Gallesio thought that it would come from a cross between a bitter orange and a file. This fruit weighs between 80 and 200 grams and looks like an orange with greenish flesh and smooth, thick skin, yellow in color at maturity. Its flesh is slightly sour and bitter. The zest of the fruit diffuses a powerful and characteristic fragrance that is unique among citrus, with the single exception, much more discreet, of the Palestine lime. La bergamote est le fruit du bergamotier, arbre, de la famille des Rutacées principalement cultivé en province de Reggio de Calabre depuis le XVIIIe siècle et uniquement sur une étroite bande de la côte calabraise, le long de la mer Ionienne et la mer Tyrrhénienne où la bergamote alimente encore une petite industrie locale. En 1811, Giorgio Gallesio pensait qu'elle serait issue d'un croisement entre une orange amère et une lime. Ce fruit pèse entre 80 et 200 grammes et ressemble à une orange à la chair verdâtre et à la peau lisse et épaisse, de couleur jaune à maturité. Sa chair est légèrement acide et amère. Le zeste du fruit diffusent un parfum puissant et caractéristique qui est unique parmi les agrumes, à la seule exception, nettement plus discrète, de la limette de Palestine.
