Harissa

Harissa is a typical North American sauce and spread mainly in Tunisia, based on fresh red chili pepper, garlic to which is added olive oil. It has the texture of a pasta, similar to tomato concentrate. Other ingredients commonly used in the preparation of harissa are coriander, cumin or carvings. Sometimes even tomatoes. The term harissa comes from the Arab harasa root, and could therefore be translated with pesto. Harissa can be used both as a condiment and as an ingredient. It gives a typical flavor to the foods. It often accompanies couscous, but also pasta, soups, salads and kebabs. An excellent appetizer is made up of harissa, olive oil, and broken black olives. It is tasted on pieces of bread of various kinds. Especially in North Africa many prepare it for themselves, but it is also available for sale in cans and tubes. La harissa è una salsa tipica del Nordafrica e diffusa soprattutto in Tunisia, a base di peperoncino rosso fresco, aglio alla quale si aggiunge l'olio d'oliva. Ha la consistenza di una pasta, simile al concentrato di pomodoro. Altri ingredienti che di solito rientrano nella preparazione della harissa sono il coriandolo, o cumino, oppure carvi. A volte anche dei pomodori. Il termine harissa deriva dalla radice araba harasa, e potrebbe quindi venire tradotto con pesto. La harissa può essere usata sia come condimento sia come ingrediente. Essa conferisce un tipico sapore piccante ai cibi. Spesso accompagna il cuscus, ma anche la pasta, le minestre, le insalate e il kebab. Un ottimo antipasto è costituito da harissa, olio d'oliva, e olive nere spezzettate. Lo si gusta su pezzi di pane di vario genere. Soprattutto in Nordafrica molti la preparano da sé, ma la si trova anche in vendita, sia in barattoli, sia in tubetto.
