🌙【Last Night's Prep】

🟢 Vegetables

These finely chopped veggies (celery, carrot, onion) are used in both the paella and bouillabaisse.

Chopped with a food processor

Sautéed in olive oil with anchovies, curry powder, various spices, and garlic

Ready for use!

And that’s it for the night 🛌🌛
Goodnight 😴

☀️ Good morning! Time to cook! ❗️

【Main Ingredients】

🔵 Seafood

🟡 For the Paella
I used cauliflower rice instead of regular rice!

【How to Make Everything】

① Divide last night’s veggie mix into two pans:
One for paella, one for bouillabaisse

For the paella:
Mix the veggie base with microwaved cauliflower rice and season with paella seasoning

For the bouillabaisse:
Combine the veggie base with canned tomatoes and white wine (I didn’t have any, so I used sangria 😅)

⚠️ Later, I’ll add the steaming liquid from the mussels, clams, and seafood mix.

② Prepare the mussels:
Pierce the bag and microwave for 10 minutes

Add the steaming liquid to the bouillabaisse base, check that shells have opened

Discard half of the shells for easier plating

③ Prepare the clams:
Used 2 out of 3 bags (150g each)
Microwaved in a silicone steamer for 10 minutes
Added the steaming liquid to the bouillabaisse

(Accidentally forgot to take a photo of the steamed clams 💦)

④ Prepare the seafood mix:
Thawed using brine solution (water + salt + sugar)

Drained after thawing

⑤ Prepare the shrimp:
Cleaned and deveined

⑥ Steam the shrimp & seafood mix together:
Microwave in silicone steamer for 5 minutes
Add the steaming liquid to the bouillabaisse

📸 [After steaming]

⚠️ The seafood mix came out very fresh thanks to the brine method!

⑦ Prepare the squid:
It’s sashimi-grade, so I just kept it ready for plating

⑧ Prepare the bell peppers:
Microwaved for 3 minutes on a paper towel-lined plate

⑨ Paella 🥘🥘🥘
Let’s finish it all in one go!

Mix in half of the ingredients. Save the other half for topping/decor.

Top with bell peppers & lemon — it’s done!

⑨ Bouillabaisse 🍲🍲🍲
Let’s finish this too!

Add the steaming liquids and seafood. Simmer together.

Top with bell peppers and parsley — done!

⑩ Shrimp Salad

Homemade Dressing:

3 tbsp mayo

3 tbsp ketchup

1 tbsp yogurt

A dash of lemon juice

A bit of honey

A bit of garlic paste

Salt & pepper to taste

✅【Final Dish Overview】

🍅【Bisque】

Traditionally, bisque uses whole head-on shrimp.

This time, I strained the bouillabaisse broth and added fresh cream.

Topped with more cream & parsley 💖

🍨【Easy Dessert Idea】

I had some frozen milk mochi daifuku that had gotten too hard…
So I soaked it overnight in Calpis!

(The leftover Calpis — I drank it 😋)

Then I added mango pudding, pineapple, and topped with goji berries!

All done!

🔴 Reflections

Paella
The cauliflower rice worked perfectly — delicious and guilt-free!

Bouillabaisse
I didn’t use any bouillon or salt — the only seasoning was from the sautéed anchovies and veggies.
Using the natural juices from the mussels, clams, and seafood mix made it incredibly flavorful.

Shrimp Salad Dressing
Turned out fantastic! 😄

Bisque
Very rich and flavorful.

Dessert
Sadly, the mochi didn’t soften as much as I hoped… 💧
Lesson learned: eat them while they’re still soft and chewy after opening!

By the way, all the dishes this time are my own personal creations.
There are plenty of authentic recipes out there too, but I hope mine gave you some fun ideas 💖
