Aubergine

Eggplant or Eggplant - in Austria Melanzani - is a subtropical plant species, which belongs to the genus Nachtschatten within the family of the Nachtschattengewächse. The eggplant consists of three main varieties: var. Esculentum, "nees"; With round ovate fruits, var. Serpentinum, "L.H.Bailey"; With long slender fruits and var. Depressum, "L.H.Bailey"; With particularly small fruits. The most famous form in Germany is Solanum melongena var. Esculentum with its club-shaped, dark-violet to black-appearing, about 20 cm long fruit. However, other forms can also be white or else white and violet. When the overripe begins, discolouration occurs in the brown and yellow and the gloss of the fruits disappears. Since, in particular, immature and young fruits of the black, approximately 20 cm long eggplant, sold most frequently in Germany, are hardly suitable for raw consumption because of their content of bitter substances and solanine, they are eaten stewed, fried or cooked as vegetables. Die Aubergine oder Eierfrucht beziehungsweise Eierpflanze – in Österreich Melanzani – ist eine subtropische Pflanzenart, die zur Gattung Nachtschatten innerhalb der Familie der Nachtschattengewächse gehört. Die Aubergine besteht aus drei Hauptvarietäten: var. esculentum,„Nees“; mit runden eiförmigen Früchten, var. serpentinum,„L.H.Bailey“; mit langen schlanken Früchten und var. depressum,„L.H.Bailey“; mit besonders kleinen Früchten. Die in Deutschland bekannteste Form ist Solanum melongena var. esculentum mit ihrer keulenförmigen, dunkelviolett bis schwarz erscheinenden, etwa 20 cm langen Frucht. Andere Formen können aber auch weiß oder auch weiß und violett sein. Bei beginnender Überreife treten Verfärbungen zum Braunen und Gelben hin auf und der Glanz der Früchte verschwindet zunehmend. Da insbesondere unreife und junge Früchte der in Deutschland am häufigsten verkauften schwarzen, etwa 20 cm langen Aubergine aufgrund ihres Gehaltes an Bitterstoffen und Solanin kaum zum Rohverzehr geeignet sind, werden sie gedünstet, gebraten oder gekocht als Gemüse gegessen.
